Other winter squash recipes you may enjoy: Pour maple syrup mixture over pumpkin mixture coating evenly. Place pumpkin and apples on large serving platter. (When you begin to smell the nuts, they are probably ready.) Remove from heat, cool slightly, and coarsely chop.Īdd cinnamon, nutmeg, small pinch of salt, maple syrup and 1/4 cup olive oil to small skillet used for nuts. Toast over medium high heat just until nuts start to turn golden brown, stirring frequently. Meanwhile, add the walnut halves to a dry skillet. Place each half cut side down and carefully cut the pumpkin into wedges about 1/4 inch thick.

Reserve the seeds and roast later for pepitas. (I use a heavy spoon or ice cream scoop for this). With a sharp knife, cut the pumpkin in half. Line 2 rimmed baking sheets with parchment paper and set aside.
